ADAM D´Sylva´s restaurant Coda, featured in The Age Good Food Guide securing One Hat, has Melbourne foodies talking, much of the buzz is due to interest in the career of this young chef, who was The Age Good Food Guide's 2008 young chef of the year. The former head chef at Pearl and Longrain, D´Sylva has focused on shared dishes and moved away from the structured three-course meal. "It's a blend of European and Asian," he says. "It reflects my heritage and my previous experience as a chef … and it's food I like to eat." Guests arrive at 6.30pm to enjoy drinks purchased from the bar. Then it is on to an in depth cooking Master Class that will cater for the novice right through to expert. Dinner is served in small course throughout the evening.
